A soft, barrel-shaped marine animal that lives on the seabed. Despite the name, nothing to do with cucumbers. Its closest relatives are starfish and sea urchins.
People have been eating it for four hundred years. In Chinese it is called 海参 — sea ginseng — and it has been one of the most valuable seafoods in Asia for most of that time.

Good to know before you order.
What does it taste like?
Much less than people expect. Faintly of the sea, closer to a dried scallop than to fish. In congee or broth it reads as savoury depth rather than a distinct flavour. The capsules have no taste at all.
How long before I notice anything?
Consistency matters more than quantity. Most people take it daily with a meal and give it two to four weeks before forming a view.
Capsules or powder?
Capsules if you want it to disappear into a routine. Powder if you cook and would rather stir it into congee, broth or a braise. They are the same material.
Where does it come from?
Cucumaria frondosa, the orange-footed sea cucumber, wild-harvested from the cold North Atlantic. It is not one of the tropical species whose stocks were depleted.
Why gonad instead of the whole animal?
The gonad and mouth are the most historically prized part of the animal — the basis of delicacies like konoko in Japan, traditionally made from a different, warmer-water species. It is also the smallest fraction of each animal, which is why it takes sixty of them to make a hundred grams. Most sea cucumber powder on the market uses the body wall, which is far more abundant and far less scarce.
Is there anything else in it?
No. One ingredient. No fillers, binders, dyes or flow agents. The capsule shell is plant-based.
Any allergy concerns?
Sea cucumber is an echinoderm, not a shellfish, but anyone with a broad seafood allergy should avoid it. Check with your doctor if you are pregnant, nursing or taking medication.
How should I store it?
