Our sea cucumbers come up in mixed hauls from the cold North Atlantic and are sorted by hand on deck. Only the gonad and mouth are kept — the body wall, which is most of the animal by weight, is not used. What remains is cleaned, cooked and slowly dried the way this cut has always been processed. Sixty animals go into every 100 grams.
"Roe" isn't always eggs.
Roe, strictly, means fish eggs. But food culture has never used it that strictly — sea urchin “uni” and scallop “coral” are both gonad tissue sold under the same loose word. We use “roe-style” the same way.
What sushi menus call uni is the whole gonad — ovary or testis, depending on the individual — not eggs specifically. Both are eaten and prized equally, and nobody sorts urchins by sex before serving them.
The crescent attached to a scallop is its gonad. The orange half is the female organ, technically the only part that carries actual eggs; the white half is the male organ. Cooks call the whole thing roe, or coral, without distinction.
Salmon roe, caviar, tobiko — this is the one case where “roe” means literal eggs. It is the narrowest use of the word, not the only one food culture recognises.
We use “roe-style” to describe the gonad and mouth tissue we extract — the part prized across sea urchin, scallop and sea cucumber traditions alike, long before anyone worried about the biology term.

Nothing is added and nothing is extracted. These occur naturally in the animal.
Omega-3 fatty acids
Gonad tissue is where sea cucumbers store lipids for reproduction, including polyunsaturated fats such as EPA and DHA — the same class of fatty acid found in fish oil.
Carotenoids
Pigments such as astaxanthin, concentrated in the reproductive tissue. The same antioxidant family found in salmon and shrimp.
Protein
The gonad and mouth tissue carry their own protein fraction, distinct from the structural collagen found in the body wall.
Phospholipids
Membrane lipids present alongside the fatty acid content. Documented across several sea cucumber species; not yet assayed in this batch.
Described as constituents of the species, not as quantified amounts in this batch. We make no claims about what any of them do.
