It reaches the table
Sea cucumber begins appearing in Chinese cookery, prized for the texture it lends a slow-cooked soup rather than for any flavour of its own.
Makassar becomes the hub
An entire maritime economy forms around trepang fishing, with Chinese junks calling at dozens of ports each season.
Fleets reach northern Australia
Makassan crews sail annually to the Kimberley and Arnhem Land. It is the first sustained contact between Aboriginal Australians and their Asian neighbours, and it left its mark on Yolngu language.
Nine hundred tonnes a year
At its height the Makassar fleet supplies roughly a third of Chinese demand. In Japan a single piece of dried sea cucumber can take ten to twenty kilos of animal.
The North Atlantic opens
With tropical stocks depleted, buyers turn to a cold-water species nobody had bothered with. That fishery is where this jar comes from. None of the history above is ours, and that is rather the point.
An animal that turns itself inside out and grows back.
No claims here. Just a genuinely strange creature.
Brains. It has a ring of nerves around the mouth instead, and manages perfectly well without one.
Thirty animals go into every hundred grams of powder
Not a fish. Its nearest relatives are starfish and sea urchins, and like them it moves on hundreds of tiny water-powered feet.
To regrow its internal organs. Threatened, some species eject them entirely to escape, then rebuild.

Four days vs Four seconds
Whole dried sea cucumber is one of the most demanding ingredients in any kitchen. That is exactly why we mill it.
- Soak in cold water for 48 hours, changing the water twice a day.
- Simmer, then soak again.
- Trim the interior wall and rinse thoroughly.
- Soak once more before it is ready to use.
- Keep everything free of oil, which ruins the rehydration.
- Two capsules with a meal. That is the whole method.
- Or a half teaspoon of powder into congee, broth or a braise.
- No soaking, no trimming, no planning three days ahead.
- Same ingredient, already cleaned, cooked and dried.
The traditional preparation is worth doing at least once. This is for the other three hundred and sixty-four days.
