An ingredient, not a supplement in a jar.

Warm ochre, finely milled, and mild — closer to a dried scallop than to fish. It dissolves into hot liquid without clouding and lends body to whatever it's in. In China and Japan sea cucumber has gone into slow-cooked soups for four hundred years, valued for the texture it gives the broth around it. This is that ingredient, in a form you can keep next to the salt.

Cucumaria frondosa, wild-harvested from the cold North Atlantic, dried at low temperature and milled. One ingredient, nothing added.

A half teaspoon is a serving. A 100 g jar holds roughly fifty.

Three ways to use it

  • Congee — a half teaspoon stirred through rice porridge as it finishes. The traditional use and the easiest place to start.
  • Miso or broth — whisk into simmering stock. It dissolves cleanly and adds savoury depth rather than a distinct flavour of its own.
  • Braises — a spoonful into the pot with mushrooms, ginger and soy. It deepens the background.

Start with less than you think. It is a stock powder, not a spice.

  • Soak in cold water for 48 hours, changing the water twice a day.
  • Simmer, then soak again.
  • Trim the interior wall and rinse thoroughly.
  • Soak once more before it is ready to use.
  • Keep everything free of oil, which ruins the rehydration.
